Apple and Sea Buckthorn Pudding

  • ¾ cup brown sugar
  • 6 apples
  • 1⅔ cups sifted flour
  • 3 teaspoons baking powder
  • ½ teaspoons salt
  • ½ cup sugar
  • ⅓ cup shortening
  • 1 egg
  • ⅓ cup buckthorn juice
  • ½ cup milk


Preheat oven to 400°F.
Peel, core and slice apples. Place in bottom of greased 13 x 9 inch baking dish and sprinkle with brown sugar. Place in oven while preparing the pudding mixture. Mix together flour, baking powder and sugar. Add shortening and work it into the dry ingredients with your fingers. Beat together the egg, buckthorn juice and milk. Add to dry ingredients and mix lightly, until moistened. Remove apples from the oven and spread batter over them. Bake 25 minutes.
