Chicken pasta salad with saskatoon berries

Ingredients

  • 4 boneless chicken breasts
  • 125 ml (½ cup) flour
  • 2 eggs beaten
  • 375 ml (2 ½ cups) corn flakes
  • Saskatoon berry chutney
  • 250 ml (1 cup) Saskatoon berries*
  • 2 chopped green onions
  • 7 ml (1 ½ teaspoons) grated fresh ginger
  • 50 ml (¼ cup) brown sugar
  • packed 50 ml (¼ cup) water
  • 30 ml (2 tablespoons) cider vinegar
  • 7 ml (1 ½ c. à thé) cornstarch
  • pinch salt

Method

Place chicken breasts in a roasting pan and bake for 15 to 20 minutes or until a meat thermometer inserted in the thickest portion reaches 77°C (170°F). Serve immediately with chutney. Saskatoon berry chutney : Mix together all ingredients in a large pot. Bring to a boil over medium heat, stirring often. Cook until the mixture reaches the consistency of jam (3 to 5 minutes). Remove from heat and let cool. Serve with chicken breasts. * – The Saskatoon berry is native to the Canadian Prairies and tastes something like a blueberry. You may substitute blueberries for Saskatoons in this recipe if you wish.
