Honeysuckle berry mousse

  • 2 egg whites
  • 1pinch salt
  • 1 cup sugar (250 ml)
  • 1 cup honeysuckle berries (250 ml)


In a bowl, beat egg whites until foamy with an electric mixer. Add salt and beat until the mixture forms soft peaks. Gradually add sugar and berries. This produces a soft, smooth, mousse.
