Chicken breast with saskatoon berry chutney

Place chicken breasts in a roasting pan and bake for 15 to 20 minutes or until a meat thermometer inserted in the thickest portion reaches 77°C (170°F). Serve immediately with chutney. Saskatoon berry chutney : Mix together all ingredients in a large pot. Bring to a boil over medium heat, stirring often. Cook until the mixture reaches the consistency of jam (3 to 5 minutes). Remove from heat and let cool. Serve with chicken breasts. * – The Saskatoon berry is native to the Canadian Prairies and tastes something like a blueberry. You may substitute blueberries for Saskatoons in this recipe if you wish.
